Fruit Smoothie- 3 cups of lowfat vanilla or plain yogurt
- 10-15 medium size frozen strawberries
- 8-10 frozen peach slices
- 2-3 bananas
- 1 cup of ice
Put all fruit and ice in the blender. Blend on medium-high until finely chopped. Add yogurt and blend until smooth. Freeze left overs for a frozen snack at a later time. You can also try blueberries and bananas with the yogurt. Healthy Tuna Sandwich - 1 can tuna
- 3-4 tbsp non-fat sour cream
- 3 tsp sweet relish
- 1/4 cup mozzarella cheese finely shredded
- salt and pepper to taste
Mix tuna, sour cream, relish (add extra if needed), cheese and seasoning. Spread on toasted wheat bread or on crackers. In a lightly greased 13x9 baking dish place 3 noodles on bottom, put 1/2 meat mixture, 1/2 cheese mixture. Repeat with remaining 3 noodles, remaining meat and cheese mixture. Sprinkle with Parmesan cheese. Bake at 350 degrees for 45 minutes. Let stand 10 minutes to cool. Healthy Shrimp Pasta 12 oz. pkg. rotini or bow tie pasta1 c. grated Parmesan cheese3-4 cloves pressed garlic3/4 c. olive oil2 c. shrimp (@ 1/2 lb.), cooked and ready to eat2 tsp. dried parsley or 1/2 c. fresh parsleyHeat olive oil in pan over low heat. Add garlic and saute lightly. Remove from heat and add parsley. Cook and drain pasta to package directions. Mix cooked pasta with the oil, garlic, and parsley mixture. Add shrimp and toss. Next, add the Parmesan cheese and toss. Serve immediately.
