Barbecue Chicken Ingredients Makes 4 servings 1 tsp oil 3 lbs chicken pieces kosher salt and black pepper 16 oz barbecue sauce 16 oz orange soda Preheat an electric skillet to 275 degrees F. Add olive oil. Season chicken on both sides with salt and pepper. When oil is hot, add chicken to the skillet. Brown for 2 minutes on the first side. Flip. Add the barbecue sauce and orange soda. Cook, basting occasionally, 35-40 minutes until chicken is cooked through. Bean Burritos Ingredients Makes 4 servings 1 16 oz can refried beans 1 cup shredded cheese of your choice 4 flour tortillas 2 tomatoes, chopped 1 onion, chopped 1 cup sour cream Heat a skillet to low/medium. Add beans and stir until warm. Heat tortillas in microwave for 15 seconds. Spread beans on each tortilla. Add the other ingredients and fold the tortilla into a burrito. Beef Macaroni Ingredients Makes 7-8 servings 2 lbs ground beef 2 cups uncooked elbow macaroni 2 tsp sugar or 1 tsp stevia sugar substitute 5 cups water 1 16 oz can tomato sauce While boiling the macaroni, brown beef, drain, add all ingredients to beef, cook 15 - 20 minutes. Drain water from macaroni. Add all ingredients to the macaroni, mix well. Casserole Deluxe Ingredients 1 lb ground beef 1/2 med onion, chopped 1 can mixed vegetables, drained 3 cups parmesan cheese 1 can tomato soup 1 bag thin noodles of your choosing Cook beef with onion until brown, drain. Boil noodles. Add soup and vegetables to beef mixture. Arrange noodles on top of beef mixture. Sprinkle parmesan cheese on top. Bake 15 minutes at 375 degrees. Speedy Lasagna Ingredients Makes 7-8 servings 1 large can tomato sauce or jar of spaghetti sauce 1 small tub cottage cheese 3/4 cup shredded mozzarella cheese Package of egg noodles 1 lb ground beef Brown ground beef and add spaghetti or tomato sauce. Add cottage cheese and half of the mozzarella, stir. Fill cottage cheese tub with water and add it to the mixture. Fold in noodles, pour into casseroles. Bake uncovered at 375 degrees for 20 minutes. Garlic Broccoli With Sesame Ingredients Makes 4 servings 1 large bag frozen broccoli 2 cloves garlic, crushed 3 tbsp sesame oil Squeeze of lemon juice Steam broccoli until tender yet crisp. In a large skillet, saute crushed garlic in olive oil until brown. Add broccoli to skillet and cook over moderate heat 3 to 4 minutes. Stir occasionally. Serve with a squeeze of fresh lemon juice. Rice Stuffed Peppers Ingredients Makes 4 peppers 4 large green peppers, stems and seeds removed. 1 medium onion, minced. 2 cups cooked brown rice. 1/2 lb ground beef. 1 cup shredded cheddar cheese. Preheat oven to 350 degrees. Parboil peppers in boiling water 5 minutes and drain. In a medium bowl, mix onion, rice, ground beef and 1/2 cup cheese. Stuff pepper shells generously with rice mixture and top with additional cheese. Bake at 375 degrees for 20-25 minutes, or until cheese is melted and brown.
