Frugal Vegetarian, Planning Meals, Eating Healthy

We are very particular about our daily diet and a frugal vegetarian diet is always possible with some changes.
I am big on eating healthy and proper meal planning so I prefer fresh produce cooked at home; whereas frozen foods are more costly.
I have a small garden in which I have planted vegetables like lady finger, tomato and eggplants. So this turns out to be cheaper for me as I don't need to buy it from the market.
I normally buy other vegetables that I need from the local farmers as they are economical and free from pesticides. They use natural fertilizers, so the nutrient value is much higher and it is also hygienic.
I always prefer a well balanced vegetarian diet comprising of whole meal bread, pasta, potatoes and rice eaten with a variety of vegetables, fruits and occasionally nuts.
Also, grain, pulses and nuts provide a healthy balance of all the essential amino acids. A good amount of carbohydrate is incorporated in the diet which makes the meal healthy and filling.
Dry pulses can be purchased economically in bulk and stored; not to mention they're an excellent source of protein.
I normally prefer local and seasonal vegetables and fruits as those are inexpensive and easily available.
While shopping, I take along my friend and normally buy things in bulk and divide among ourselves thereby reducing the cost of the products. If food prepared is left behind in large amounts, I normally store it in containers to reuse it the next day. By following this method, I save a great deal of money.
